Apple Salad Recipe for Diabetic Meal Plans





This apple salad recipe is a great healthy choice for diabetics!

Ingredients

1 can (20 ounces) unsweetened pineapple chunks

1/4 cup Splenda No Calorie Sweetner, Granular

2 tbsps lemon juice

2 tbsps cornstarch

2 tbsps water

1/2 cup light mayonnaise

2 tsps poppy seeds

2 cups green grapes

7 tart apples, cored and chopped

1/3 cup pecans or walnuts, chopped and toasted

Drain pineapple, reserving juice. Place the pineapple juice in a saucepan. Add Splenda and lemon juice and bring the mixture to a boil. In a small bowl, combine cornstarch and water, stirring until smooth. Add the cornstarch mixture to the juice, stirring constantly. Return to a boil and cook for 2 minutes. Cool the thickened mixture for about 30 minutes, the stir in the mayonnaise and poppy seeds. Combine the grapes and chopped apples in a large bowl. Pour the dressing over the fruit and mix carefully. Sprinkle the pecans over the salad and serve.
