Cranberry Crunch Gelatin Salad







Cranberry Crunch Gelatin Salad is a great gelatin salad recipe made for diabetics.

Ingredients for Cranberry Crunch Gelatin Salad

1 box (0.3 ounce)Jell-O Sugar Free, Low-Calorie Dessert,Cranberry flavor

1 cup boiling water

1 cup cold water

1/2 cup finely chopped green cabbage

1/4 cup finely chopped baby carrots (about 8 carrots)

1/4 cup finely chopped fresh cranberries (about 1/3 cup whole berries)

Pour Jello-O mix in a small casserole. Carefully add 1 cup boiling water and stir for about 2 minutes, until powder is completely dissolved. Add 1 cup cold water and stir well. Refrigerate for 1 hour to thicken slightly. Remove from refrigerator and stir in chopped cabbage, carrots, and cranberries, and stir well. Return to the refrigerator and chill for about 4 hours until set.
