This crockpot chicken roasted with lemon flavor is a tasty meal for diabetes and kidney diets.

Ingredients

1 tbsp olive oil

2 cloves garlic, minced

1 tsp oregano

2 pounds chicken breasts, with bone and skin

one 13-ounce can chicken broth, reduced sodium

3 tbsps lemon juice

Heat oil in large skillet

Add garlic and oregano

Add chicken breasts and brown on all sides.

Place chicken in crock pot and add a can of low sodium chicken broth.

Cook on low heat setting for 6 to 8 hours.

Add lemon juice during last hour of cooking.
