Peanut Butter Brownie Recipe







This recipe is a great snack without the added fat and sugars.

1 1/3 cups all-purpose flour

2 tsps baking powder

1/2 tsp salt

1/2 cup reduced-fat chunky-style peanut butter

6 tbsps margarine, softened

1 cup firmly packed light brown sugar

1 tbsps vanilla extract

1 large egg

2 egg whites

3/4 cup unsweetened applesauce

1/4 tsp ground cinnamon

1 cup semisweet mini chocolate morsels

Preheat oven to 350. Spray a 13-x9-inch baking pan with vegetable cooking spray.

On a sheet of waxed paper, sift flour, baking powder, and salt. Set aside.

In a large mixing bowl, using an electric mixer set on high speed, beat peanut butter and margarine until blended. Beat in sugar and vanilla.

Add egg, and egg whites, beating until light and fluffy. Beat in applesauce and cinnamon. Stir flour mixture into batter; fold in chocolate morsels.

Spoon batter into prepared pan, smoothing top. Bake just until a toothpick inserted in the center comes out almost clean, about 30 minutes. Do not overbake. Cool in pan on a wire rack for 15 minutes. Cut into twenty 2-inch squares and cool completely.
