Potato Cheese Soup Recipe

Potato Cheese Soup Ingredients

32 oz fat free reduced sodium chicken broth

5 cups Hash Browns, shredded, frozen

1 cup fresh chopped onion

1/2 tsp salt

1/2 tsp black pepper

2 tbsp white all purpose flour

12 oz evaporated skim milk

1 cup cheese, cheddar, light, shredded

1/3 cup fresh chopped green onion

In a pot over medium high heat bring the chicken broth, potato, frozen onion, salt and pepper to a boil.

Reduce heat and simmer, uncovered for 20 minutes.

In a small bowl mix together the flour and milk, stirring until smooth. Add to potato mixture and cook over medium heat until thick, about 5 minutes, stir constantly.

Take 1/2 the mixture and put into a blender, cover and process until smooth. Pour into a large bowl and repeat with the remaining 1/2 of the potato mixture.

Return all of the blended potato mixture to the pot over medium heat, add cheese and stir until melted.

Serve and sprinkle with green onions on top.
