My favorite low-carbohydrate recipe is Tomato and Courgette Bake. You simply slice the courgettes, and tomatoes, and layer them in a baking dish then sprinkle low fat grated cheddar and some ready brought breadcrumbs. This needs to be baked in the oven for 30-45 minutes on 200. You can also serve this with butter beans or chick peas if you want to add some extra carbohydrate,I am a diabetic and do this myself as the beans are great for balancing out your blood sugars.
