Cheesy Turkey Noodle Casserole for Diabetic Meal Plans







This cheesy turkey noodle bake is one skinny version of a high fat favorite.

Cheesy Turkey Noodle Bake

2 cups no-yolk egg noodles

1 tbsp. vegetable oil

1 medium yellow onion chopped (about 1 cup)

1/2 pound lean ground turkey

1/4 cup beef broth

2 tbsps tomato paste

2 cloves garlic, minced

2 tbsps sliced pimiento-stuffed green olives

1/4 tsp black pepper

1/2 cup shredded reduced-fat cheddar cheese

2 tbsps chopped fresh parsley

Preheat oven to 425. Cook noodles according to package directions. Drain.

While noodles are cooking, in a large skillet, heat oil over medium heat. Add onion and saute until tender, about 3 minutes. Add turkey, cook, stirring, until no longer pink about 4 minutes. Add broth, tomato paste, garlic, olives, and pepper. Cook, stirring until mixture thickens, about 3 minutes.

Place noodles in a large bowl. Stir in turkey mixture, cheddar, and parsley. Toss well.

Spoon noodle mixture into a 1 1/2 quart casserole. Bake until golden brown about 20 minutes. Serve immediately.
