Holiday Thumbprint Cookies Ingredients
1/2 Cake, yellow, light, dry mix, 18.5 ounce package
3 tbsp orange juice
2 tsp grated orange peel
1/2 tsp vanilla extract
5 tsp fruit spread, strawberry, 100% fruit
2 tbsp chopped pecans
Preheat the oevn to 350. Spray baking sheet with nonstick cooking spray and set aside.
In a medium bowl, beat cake mix with orange juice, orange peel and vanilla with an electric mixer at medium speed for 2 minutes or until the mixture looks crumbly.
Increase speed of mixer and beat mixture for 2 minutes or until the smooth dough forms, which will be very sticky.
Use nonstick cooking spray to coat hands. Take dough and shape into 1-inch balls and place balls in prepared baking sheets about 2 1/2 inches apart.
With thumb press center of each ball and fill the thumprint mark with 1/4 teaspoon of fruit spread and sprinkle nuts over the top.
Bake cookies for 8 to 9 minutes or until the cookies have become a light golden brown and are no longer shiny, making sure not to over-bake.
Remove cookies from oven and place on wire racks allowing cookies to cool completely.
