Mediterranean Bean Salad

2 cans (15oz) Black beans drained of liquid
2 cups shredded chopped green cabbage
1 large diced red bell pepper

4 large diced green onions
4 oz crumbled feta cheese (low fat, if you can find it)
1/4 cup fresh parsley
1 clove fresh minced garlic OR 1 tablespoon from a jar
1/2 cup lemon juice
1 tablespoon extra-virgin olive oil,
Salt, pepper, paprika to your taste


In a large bowl, combine and mix well. Refrigerate for an hour or until chilled. I don't have the nutrition facts on this, but if you're not watching calories, just sugar and fat, you're pretty well-covered. This is about as healthy as you get.
