Mini Turkey Meatballs

Serves 6
Serving size: 1/6 recipe

1 pound ground turkey breast

2 large eggs

1/2 cup bread crumbs

1/4 cup grated Parmesan cheese

1/4 cup onions, finely diced

1 tbsp minced parsley

1/2 tsp black pepper

Cooking spray

Combine all ingredients and mix by hand. Do not overmix. Shape into small fork-size balls. Heat a skillet and spray with cooking spray. Cook mini meatballs until browned and done (an internal temperature of 160 F).
