2 of 15-to 16-ounce cans cannellini beans and/or pinto beans, rinsed and drained
1 14.5 ounce can no-salt-added diced tomatoes, undrained
1 tablespoon honey
1 tablespoon rice vinegar
2 teaspoons reduced sodium soy sauce
1/4 teaspoon ground ginger
1/4 teaspoon crushed red pepper
Coat a large saucepan with nonstick cooking spray. Preheat over medium heat. Cook onion and sweet pepper 5 minutes, stirring occasionally. Stir in remaining ingredients. Bring to boiling; reduce heat. Cover and simmer 10 minutes, stirring occasionally. Uncover; simmer 5 minutes more.
